Spicy Raw Thai Roll-Ups

1 cup toasted coconut, shredded

1 cup cashews

½ lime or lemon, diced

3 teaspoons Thai chili paste

6 leaves young collard greens, trimmed and steamed


1. In a food processor, mix together coconut, cashews, lime or lemon and chili paste.

2. Drop 2 tablespoons of mixture on each leaf of greens and roll up.

3. Serve immediately

*Makes 6 rolls.
